When you get a quarter or more at a time, you can talk to the processor and get exactly what you want.

Only want steak and ground beef? No problem - just tell the processor. Want single meal packages? Yep, just tell the processor.

How much is a quarter cow? Figure something like:
• 80-110 pounds

• 5-7 cubic feet of freezer space (a bit bigger than a carry-on suitcase)

• About 30 pounds of steak

• About 45 pounds of ground beef (add about another 40 pounds if you don't do roasts, stew meat, etc)

• Expect about a month between when the entire animal is sold (four buyers for quarter portions) and receiving your beef. Then a few days to arrange for the animal's pickup paperwork/transport, then at least three weeks at the processor.

• You can use a 100 qt cooler to bring your meat home. If you have a longer trip and need ice then put ice in a contractors bag so that the melt water will not soak your packaged meat.
